Potato Roast Recipe / Simple Potato Roast / Aloo Roast

Potato Roast  / Simple Potato  / Aloo Roast
Ingredients:

Potato sliced to cubes -1 cup
Turmeric powder-1/4 tspn
Chilli powder-1 tspn
Coriander powder-1 tspn
Garam masala - 1/2 tspn
Pepper powder -1/4 tspn
Salt to taste
Coconut Oil needed
Mustard and Urud dhal for sauting

Method :

  1. Slice the potato into small cubes.

  2. Heat the pan with oil and temper with mustard and urud dhal.

  3. Add potato cubes and saute for few minutes.

  4. Add turmeric, chilli powder and coriander powder,garam masala,pepper powder and salt to taste.
  1. Saute well in low flame for few minutes till it becomes golden brown and crispy.

  2. Crispy potato  roast is ready.

    Ingredients :
    ***********
    Whole fish / Malabar Fish / Parai Fish / Jack Fish - 2 nos
    Chilli powder -1 tspn
    Coriander powder - 1 tspn
    Turmeric powder - 1/2 tspn
    Cumin powder - 1/2 tspn
    Fish masala powder - 1 tspn
    Lime juice - 2 tspn
    Onion to garnish
    Salt to taste
    Coconut oil needed
    Kesari powder -a pinch (optional)

Method :

  • Clean the fish and cut the skin with knife as shown before marinate the fish.



  • Prepare masala by mixing chilli powder,coraiander powder, turmeric powder ,cumin powder ,fish masala powder with lime juice and add salt to  taste.



  • Marinate the fish with the masala and keep aside for 30 mints.



  • Heat a flat tawa with little coconut oil and fry the fish to golden brown in low flame.

  • Crispy tasty fish roast is ready.

  • Garnish with onion.

Hi Friends...Iam posting my 100 th post today...Thank u all for the support and encourages through comments and likes.I'm much grateful and thankful to all of u.
Today's recipe in 'chikkuskitchen' is traditional Sakkarai Pongal.
Sakkarai pongal is  a popular indian festival food, especially south indian authentic festival recipe. I'm happy to share this to all of u. Pongal is not only the festival recipe, all time favourite of south Indian.

Sakkarai Pongal Recipe / Sweet Pongal Recipe

Ingredients :

Raw rice - 1/2 cup
Moong dal / pasi paruppu -2 tspn
Jaggery - 3/4 cup
Grated coconut -1/4 cup
Cashews -15 pcs
Raisins - 1 1/2 tspn
Edible camphor -a small pinch(optional)
Cardamom powder -a pinch
Ghee needed
Water - 3 cups

Method :
**********************
  • Heat a cooker with little ghee and roast the moong dal.
  • Add rice ,water and cook it for 4 whistles.
  • Mash it well.
  • Break the jaggery in to small pieces. Add water and boil it, so that the jaggery completely dissolves.
  • Filter the impurities.
  • Now add the jaggery solution to the boiled rice, moong dal and mix well.
  • Roast cashews,raisins,cardamom powder, grated coconut in ghee and add a pinch of edible camphor(optional).
  • Add the roasted cashews,raisins,cardamom powder, grated coconut,a pinch of edible camphor(optional) to the mixture and mix well.
  • Add extra ghee to taste and flavour.
  • Sakkarai pongal is ready to serve.

Boneless chicken -500 grams
Chilli powder -1 tspn
Coriander -1 tspn
Turmeric-1/4 tspn
Rice flour-1 tspn
Corn flour-2 tspn
Cumin powder -1/2 tspn
Garam masala powder -1/2 tspn
Lime juice -1 tspn
Ginger garlic paste -
Onion, Curry leaves to garnish
Salt to taste
Colour powder -a pinch (optional)
Coconut oil needed

   
Method:

  • Mix chilli powder, turmeric powder ,coriander powder, rice flour, corn flour, cumin powder,garam masala powder,colour powder and ginger garlic paste .

  • Add lime juice and mix well.

  • Clean the chicken pieces and marinate with the above paste .

  • Refrigerate for two hours.

  • Heat a pan with oil and deep fry the chicken pieces to golden brown.
  • Crispy crunchy chicken roast is ready.
  • Garnish with fried curry leaves, onion and serve hot.

Button mushroom - 250 gms
Sliced Capsicum - 1/2 cup
Sliced Onion - 1 cup
Tomato - 1 cup
Garam masala - 2 tspn
Chilli powder - 1/2 tspn
Coriander powder - 1/2 tspn
Turmeric powder - 1/4 tspn
Ginger garlic paste - 2 tspn
Salt to taste
Oil needed
Curry leaves ,spring onions to garnish

  
Method :

  • Wash and clean the button mushroom, cut them into half.

  • Heat a pan with oil , saute with garam masala and ginger garlic paste.

  • Add the mushroom and salt to taste. Saute well for few mints.
  • Add sliced capsicum, curry leaves and saute well.
  • Mean time grind onion and tomato separately.
  • Add grinded onion,tomato,chilli powder, coriander powder, turmeric and saute well in a low flame till the raw smell goes off.
  • Mushroom masala is ready.

Ingredients :

Pasi paruppu/yellow moond dal - 1 cup

Soho rice - 2 tspn

Jaggery -5oo gms

Coconut milk -(1st milk) -1 cup thick
                           (2nd milk) - 2 cup thin

Cashew nuts - 50 gms

Dry grapes -25 gms

Cardamom powder -4

Ghee -needed

Method :

  • Roast yellow gram(pasi paruppu) with ghee.
  • Cook it  with water in a cooker up to 3 whistles.
  • Cook it  with water in a cooker up to 3 whistles.
  • Cook the soho with little water and add it to the cooked pasi paruppu.
  • Prepare  Jaggery solution by adding little water  with jaggery and heat and filter in a separate container.
  • Add jaggery solution and second coconut milk to the pasi paruppu and boil it.
  • Then add first coconut milk after the mixture becomes thick.
  • Add roasted  cashews, raisin, cardamom powder with ghee.
  • Cook it for 2 to 3 minutes.
  • Payaru payasam is ready.
