Left Over Recipe - Veg Bonda Recipe / Vegetable Bonda

Veg Bonda (Left Over Recipe)

Ingredients :

    Left over porial  - 1 cup ( preferably carrot beans porial)
    Potato -2 nos
    Garam masala powder - 1 tbspn
    Bajji bonda mix(ready made) -1/2 cup
    Salt to taste
    Oil needed
    Curry leaves needed


Method :
  • Cook the potato , peel off the skin and smash it well.

  • Add left over porial with potato,curry leaves and salt to taste.

  • Add garam masala and mix well.

  • Blend it and form small lemon size balls.

  • Prepare bajji bonda mix batter.

  • Dip the balls in the bajji batter and deep fry.

  • Veg bonda / Left over vegetable bonda is ready.

    Maida flour
    1/4 cup
    Asafoetida
    A pinch
    Chilli powder
    1/2 tspn
    Salt
    To taste
    Sliced Onion
    1 nos
    Moringa leaf
    5 tspn
    Oil
    needed


Method :

  • Mix besan flour,maida,asafoetida,chilli powder,salt with water to form bajji batter.

  • Add chopped onion and moringa leaf and mix well.

  • Heat a pan with oil and deep fry onion keera bajji.

  • Serve hot with tomato chutney.

  • Boil ajwain seeds for 15 mints and drain the water.
  • Mix besan flour, rice flour,chilli,powder and asafoetida.
  • Mix besan flour, rice flour,chilli,powder,asafoetida and add ajwain seed water extract.
  • Add salt to taste and mix well.
Prepare the mix as like idiyappam dough consistency
  • Heat  a pan with oil.
  • Put the dough in the idiyappam press and press it in the oil as shown in the picture.
  • Fry it to golden brown and take out, drain the excess oil.
  • Crush it by hand and garnish with fried curry leaves.

  • Mix all the ingredients (except oil) to prepare a dough.
  • Cover it with soft cloth and keep aside for 15 mints.
  • Make balls out of the dough.
  • Roll them into thin layer.
  • Using pizza cutter, cut them into diamond shape as shown in the picture.

Instant Onion Vadai


Onion vada is an easy instant recipe.It can be made within a minutes as Tea time snack




Ingredients:
                                                                                   
Onion -2                 

Maida flour - 50 grams

Rice flour - 50 grams

Corn flour -1 tspn

Gram flour -100 grams

Chilli powder -1/2 tspn

Asafoetida -1/4 tspn

Salt to taste

Cooking oil needed


Method:

Mix all the ingredients except onion by adding little quantity of water.

Add salt to taste.

Coat the sliced onions with the paste evenly and keep it for 5 minutes.

Heat the pan with oil and spread the coated onion and fry it in low flame.

Onion vadai is ready.

Serve with coffee.

Best for evening snacks.

Spicy Steamed Rice Dumpling/Chettinad Kara Kozhukattai

Ingredients :

Rice flour(roasted) - 1 Cup

Grated coconut - 4 tspn

Small onion - 50 gms

Green chillies or red chillies - 2 nos

cumin Seeds- 1/2 tspn

Mustard seeds - 1/4 tspn

Urud dal - 1/4 Tspn

Salt to taste

Gingelly oil - 2 tspn

coriander leaves finely chopped


Method :

Add a cup of water to the roated rice flour and make it paste without lumps.

Add salt to it.

Heat a pan with little oil

Saute with mustard,urud dhal and cumin seeds.

Add onion,chillies and coriander leaves and saute it well.

Add the flour paste and fry it in a low flame.

Make small lemon sized balls from the fried mixture.

Keep the balls in idly cooker and cook for 15 to 20 minutes.

kozukattai is ready to serve.

Serve it with tomato chutey.


Tomato chutney for kozukatai:

Needed:

Tomato -1

Onion -1

Red chilli -1

Salt to taste

Curry leaves needed

Gingelly oil - 1 tspn


Method :

Grind red chilli,onion and tomato to paste.

Heat the pan with oil saute with mustard seeds,urud dal and curry leaves.

Add the grinded paste and allow the flame to simmer till the oil separetes.

Add salt to taste.

Spicy tomato chutney is ready.

Paruppu Vadai Recipe

Paruppu Vadai








Ingredients:

Channa dal/Kadalai Paruppu -1/2 cup

Urud Dal - 1 table spoon

Toor Dal - 1 table spoon

Onion -1 Very finely chopped

Green chillies - 1 finely chopped

Curry Leaves - few finely chopped

Fennel seeds -1 tspn

Coriander Leaves - few finely chopped

Salt as needed

Oil to deep fry

Method :

  • Wash and soak the dal for 3 hours.
  • Then drain the water completely and keep aside.
  • Then Grind the dal with salt and fennel seeds to a coarse paste.
  • Then add the chopped onion,green chillies,Curry Leaves and Coriander Leaves and mix well.
  • And shape it into small flat rounds.
  • Heat oil in a kadai and deep fry till crispy and golden brown.
  • Crispy Paruppu vadai is ready to serve.

Bajji Recipes

Raw Banana Bajji

Milakai Bajji/Chilli Bajji/Brinjal Bajji


INGREDIENTS: 

RAW BANANA/VAZHAKKAI -2

Kadala Maavu/Gram Flour -1/2 cup

Rice flour -1 tspn

Maida flour- 1 tspn

Red chilli powder -1/2 tspn

Asafoetida -1/4 tspn

Turmeric powder -A PINCH

Baking soda - A pinch

Salt to taste

Oil for frying
 

Method : 

(Plaintain bajji/Vallakkai bajji)

  • Combine all the ingredients in a bowl and mix well except Raw banana.
  • Mix with water without any lumps,the consistency should be like idli/dosai batter.
  • Heat oil in a pan.
  • Dip the Vazhakkai in the batter and deep fry till it becomes golden in colour and crispy.
  • Remove from oil and drain the excess oil in a tissue paper.
  • Serve hot with coffee/tea.

(Milakai Bajji/Chilli Bajji)

  • Clean the chillies and Cut into half and remove the seeds.
  • Put the chilli in the hot water for 5 to 10 mints and drain it and keep aside.
  • Dip the chilli in the batter and fry in oil.

(Brinjal bajji)

  • Clean the brinjals and cut them into thin slices.
  • Dip the brinjal in the batter and fry in oil.
