Ingredients :

Bitter gourd - 2
nos
|
Potato - 1/4 kg
|
Tomato - 1 nos
|
Small Onion - 10
nos
|
Green chillies -
2 nos
|
Turmeric - 1/4
tspn
|
Coriander powder
- 1 tspn
|
Chilli powder
- 1/2 tspn
|
Lemon - 1/2 piece
|
Salt to taste
|
Oil needed
|
Method :

- Wash the potato and boil it. Peel off the skin and smash.
- Scrap the bitter gourd skin, cut it into pieces as shown in the picture.
- Remove the seeds and flesh with knife.
- Soak the pieces in salt water for 1/2 an hour.
- Meantime cut onion, tomato, green chillies in to small pieces.
- Fry onion, tomato and green chillies.
- Add smashed potato ,salt , turmeric powder ,coriander powder and chilli powder.
- Saute well. Finally Squeeze little lemon to the mixture. Stuffing material is ready.
- Drain the salt water and stuff the bitter gourd with the stuffing.
- Wrap the stuffed bitter gourd pieces with oiled banana leaves as shown in the picture.
- Preheat the oven to 200 deg convection mode and bake for 20 mints.
- Finally deep fry the pieces in to golden brown.
- Crispy stuffed bitter gourd is ready.
- Ideal for rice varieties.
