Cucumber Kitchadi Recipe / Vellarikka Kitchadi Recipe

Cucumber Kitchadi  / Vellarikka Kitchadi
Cucumber Kitchadi  / Vellarikka Kitchadi
Ingredients :
**********

Cucumber - 1 medium size
Salt to taste
Mustard seeds - 1/4 tspn
Urud dhal - 1/4 tspn
Curry leaves needed
Oil needed

Method :

  • Peel off the cucumber skin and cut it in to small rectangular shapes as shown in the picture.

  • Add little salt and water.

  • Boil it for 5 to 10 mints.
For grinding :
***********

Grated coconut - 4 tbl spn
Green chilli - 1 nos
Small onion - 2 nos
Mustard seeds - 1/4 tspn
Curd -  1/4 cup

  • Meantime grind the ingredients listed for grinding into fine paste.

  • Add the paste to the cucumber and mix well.

  • Boil the mixture in a low flame for 4 to 5 mints.
  • Saute  mustard seeds, urud dhal and curry leaves and garnish.

  • Tasty Kitchadi is ready.

Ingredients :

Pasi paruppu/yellow moond dal - 1 cup

Soho rice - 2 tspn

Jaggery -5oo gms

Coconut milk -(1st milk) -1 cup thick
                           (2nd milk) - 2 cup thin

Cashew nuts - 50 gms

Dry grapes -25 gms

Cardamom powder -4

Ghee -needed

Method :

  • Roast yellow gram(pasi paruppu) with ghee.
  • Cook it  with water in a cooker up to 3 whistles.
  • Cook it  with water in a cooker up to 3 whistles.
  • Cook the soho with little water and add it to the cooked pasi paruppu.
  • Prepare  Jaggery solution by adding little water  with jaggery and heat and filter in a separate container.
  • Add jaggery solution and second coconut milk to the pasi paruppu and boil it.
  • Then add first coconut milk after the mixture becomes thick.
  • Add roasted  cashews, raisin, cardamom powder with ghee.
  • Cook it for 2 to 3 minutes.
  • Payaru payasam is ready.

  • Boil ajwain seeds for 15 mints and drain the water.
  • Mix besan flour, rice flour,chilli,powder and asafoetida.
  • Mix besan flour, rice flour,chilli,powder,asafoetida and add ajwain seed water extract.
  • Add salt to taste and mix well.
Prepare the mix as like idiyappam dough consistency
  • Heat  a pan with oil.
  • Put the dough in the idiyappam press and press it in the oil as shown in the picture.
  • Fry it to golden brown and take out, drain the excess oil.
  • Crush it by hand and garnish with fried curry leaves.

Mysore Pak Recipe / Diwali Sweets Recipe

Mysore Pak / Diwali Sweets Recipe
Ingredients :

Besan flour / Kadalai maavu -1 cup
Sugar - 2 1/2 cups
Ghee - 2 cups
Water - 1cup
Sieve besan flour.
  • Add 2 table spoon of ghee with the flour and roast it for 5 mints in a low flame.
Again sieve this and keep aside.
  • Meantime heat the balance ghee in a pan.
  • Grease the mysore pak tray with ghee and keep ready.
Heat  a pan with sugar and water till one string consistency.
Heat  a pan with sugar and water till one string consistency. Sugar syrup is ready.
  • Now add sieved roasted besan flour gradually to the sugar syrup and stir constantly.
  • Make sure that no lumps formed.
  • Add hot ghee simultaneously and stir well with a stirrer.
                    
  • Stir well till the mixture non-sticky with the pan.
  • Add remaining ghee, stir well and pour the mixture to mysore pak tray.
  • Set it to cool for sometime.
  • Now cut the mysore pak with a sharp knife in to required shapes.
Softy ,Tasty ,Yummy Mysore Pak  is ready.
