Chicken Curry (Kerala style)

Chicken Curry

  • Heat a mud pot with coconut oil add cinnamon,cloves and saute well.
  • Add onion, green chillies, ginger garlic paste, curry leaves and saute well.
  • Add tomato and salt to taste and saute till it is mushy.

  • Add cleaned chicken and pepper powder and saute well.
  • Add thin coconut milk and close the lid and cook in a medium flame.
  • Meantime roast chilli powder, coriander powder with little oil in a pan.
  • Add the above to the chicken and stir well.
  • Add the thick coconut milk and mix well.

  • Cook in a low flame for about 10 mints till the oil separates.
  • Kerala chicken curry is ready .

Ingredients :

Chicken - 500 gms
Small Onion(sliced) - 1/2 cup
Tomato (sliced)- 1/2 cup
Ginger garlic paste - 1 tspn
Chilli powder- 1 tspn
Coriander powder - 1 tspn
Pepper powder - 1/2 tspn
Cloves, cinnamon for sauting
Thin coconut milk - 1 cup
Thick coconut milk - 1 cup
Curry leaves needed
Green chilli - 1 nos
Coconut oil needed
Salt to taste

 
Method :

  • Heat a mud pot with coconut oil add cinnamon,cloves and saute well.
  • Add onion, green chillies, ginger garlic paste, curry leaves and saute well.
  • Add tomato and salt to taste and saute till it is mushy.
  • Add cleaned chicken and pepper powder and saute well.

Chicken Fry / Fried Chicken
Ingredients:

**************
Boneless chicken -500 grams
Chilli powder -1 tspn
Coriander -1 tspn
Turmeric-1/4 tspn
Rice flour-1 tspn
Corn flour-2 tspn
Cumin powder -1/2 tspn
Garam masala powder -1/2 tspn
Lime juice -1 tspn
Ginger garlic paste -
Onion, Curry leaves to garnish
Salt to taste
Colour powder -a pinch (optional)
Coconut oil needed

   
Method:

  • Mix chilli powder, turmeric powder ,coriander powder, rice flour, corn flour, cumin powder,garam masala powder,colour powder and ginger garlic paste .

  • Add lime juice and mix well.

  • Clean the chicken pieces and marinate with the above paste .

  • Refrigerate for two hours.

  • Heat a pan with oil and deep fry the chicken pieces to golden brown.
  • Crispy crunchy chicken roast is ready.
  • Garnish with fried curry leaves, onion and serve hot.

Ingredients :

Chicken -1/2 kg


Small onion - 1 cup(sliced)


Chilli powder -1/2 tspn


Coriander powder -1/2 tspn


Mustard seeds -1/2 tspn


Urad dal -1/2 tspn


Curry leaves needed


Oil needed


Salt to taste


Red chilli - 1 nos
  • Wash the chicken and add small onion(sliced).
  • Add chilli powder, coriander powder, salt to taste, little curry leaves.
  • Add little water and cook it for 3 whistles.
For grinding :
**************************

Grated coconut -1/2 cup
Cumin seeds - 1tspn
Turmeric powder - 1/4 tspn
Small onion - 5 nos
Garam masala - 1 tspn

  • Meantime grind the ingredients listed for grinding into coarse form.
  • Add the mixture to the cooked chicken and mix well.
  • Fry it for few mints till the raw smell goes off.
  • Now temper with red chilli,mustard seeds,urad dal and curry leaves.
  • Now chicken thoran is ready to serve.

  • Heat a pan with oil add garam masala, onion and green chillies ,sauté well.

  • Add tomato and curry leaves and saute well.

  • Add turmeric, chilli powder, salt to taste and saute till it becomes golden brown.

  • Half slit the egg and add to masala and saute for few mints.

  • Egg masala is ready. 

  • Ideal for Rice and chapatti.

Sliced onion -3 nos

Method :

  • Heat a pan with oil add garam masala, onion and green chillies ,sauté well.
  • Add tomato and curry leaves and saute well.
  • Add turmeric, chilli powder, salt to taste and saute till it becomes golden brown.
  • Half slit the egg and add to masala and saute for few mints.
  • Garnish with coriander.
  • Egg masala is ready. 
  • Ideal for Rice and chapatti.

Nethili Karuvadu Kuzhambu Recipe / Dry Fish Curry / Dried Anchovies Curry

This is one of ma fav recipe that my mom makes.:-) I got this recipe from my mom..she is a good cook..

This is my mom's special nethili karuvadu kulambu recipe

Nethili Karuvadu Kuzhambu / Dry Fish Curry / Dried Anchovies Curry

  • Soak the dried Anchovies for 4 to 5 hours.

  • Wash the fish thoroughly to remove the salt and sand and split the anchovies and remove the bones.

  • Grind coconut,cumin.onion.little curry leaves,chili powder, turmeric to fine paste.

  • Prepare tamarind water.

Cut the plantain ,brinjal green chilli and chilli bajji milagai into thin slices and add them to tamarind water(add little sea salt-kal uppu).

Take a mud pot add the grinded mixture, add the tamarind water with brinjal,plantain,chilli bajji milagai  and green chilli.

  • Add cleaned dry fish in the mixture.

  • Add table salt to taste and boil it till the raw smell goes off.

  • Finally add coconut oil and curry leaves and close the lid.

  • Serve with Rice.

    Dried Anchovies / Nethili Karuvadu -300 gms(cleaned)
    Grated coconut -1/4 cup
    Cumin seeds -1 tspn
    Small onion -5 nos
    Chilli powder-1/2 tspn
    Turmeric powder -1/4 tspn
    Tamarind water -1/2 cup
    Raw plantain -1 nos
    Brinjal -2 nos
    Green chilli - 1
    Chilli Bajji Milagai -1 optional
    Coconut oil - needed
    Curry leaves needed
    Sea salt & Table salt needed

Method :

  • Clean the kaadai(quail).

  • Mix the chilli powder,coriander,pepper,garam masala,turmeric, ginger garlic paste,salt, with little water and lime juice.

  • Marinate the quail with the paste and keep it for 1 hour.

  • Heat a pan with oil and fry it till it becomes golden brown and crisp.

  • Marinate the quail with the paste and keep it for 1 hour.
  • Heat a pan with oil and fry it till it becomes golden brown and crisp.
  • Kaadai fry is ready.
  • Serve with rice /pulao.
