Nethili Meen Kuzhambu (Anchovies Curry)

This is one of my favorite Dish.. My mom's special Recipe too ..




Ingredients:

Anchovies/Nethili Meen -1/2 kg

Grated coconut -1/2 cup

Small onion -6 pcs

Red chillies -3 or Chilli Powder – ½ tspn

Turmeric powder- 1/4 tspn

Tamarind liquid -needed

Sliced Raw Mango-7 pcs

Drumstick-10 pcs (cut pieces)

Green chilli – 1nos

Coconut oil -4 tspn

Curry leaves needed


Method:

  • Cut the head and tail of the fish.
  •  Wash and clean the fish and keep aside.
  • Grind all the ingredients except tamarind (grated coconut, small onion, red chilli or chilli powder, little curry leaves, turmeric powder)
  • Add water to form liquid.
  • Add tamarind water and salt to taste.
  • Add sliced raw mango and drumstick pieces and sliced green chilli.
  • The fish curry should taste sour and little spicy.
  • Heat the mud pot with the content and cook for some time.
  • Add fish to it and cook for some time.
  • Finally add coconut oil and half handful of curry leaves and close the lid and boil in a low flame for 2 mints.
  • When you open the lid the oil should be floating on the top.
  • Now the Fish curry is ready.
  • Switch off the stove.
  • Ideal for Rice and Idly.

(The leftovers fish curries can be taken on the next day too...it would taste yummmy)

Ingredients:


Dosai Batter -2 cup

Egg -2

Mutton curry kheema -1 cup

Gingelly oil  or ghee -needed


Preparation of Mutton curry keema :


Ingredients:


Minced mutton -250 gms

Onion - finely chopped - 1 nos

Tomato - finely chopped - 1 nos

Ginger- garlic paste - 1 tspn

Grated Coconut - 1/4 cup

Coriander -1 tspn

Red Chillies - 3 nos

Turmeric powder - a small pinch

Garam masala powder -1/4 tspn

Pepper -1/2 tspn

Curry leaves needed

Coriander leaves to Garnish

Salt to taste

Oil needed


Method:


Prepare masala by roasting and grinding red chillies, grated coconut, coriander seeds, pepper and curry leaves.

Heat the cooker with oil.

Add onion, ginger garlic paste and saute it well.

Add tomatoes and saute well.

Add minced mutton and add masalas and saute well.

Add little quantity of water and close the lid and cook it for 3 whistles.

Open the lid and add curry leaves and coriander leaves.

If any excess water is found heat the gravy in a low flame to get semi solid keema.

Mutton kheema is ready.


Preparation of mutton kheema dosai :
 
Heat the dosa tawa and prepare dosai.
 
Mix the egg with mutton kheema and blend it well.

Pour the mutton kheema egg mixture above the dosa to form a layer.

Add ghee or oil.

Cover the tawa with a lid for one minute in a low flame.

Flip the dosai after one minute and cook on other side for one minute.

Garnish with coriander leaves.

Spicy tasty yummy mutton kheema dosai is ready to serve.

Chicken Fried Rice

Chicken Fried Rice





Ingredients :

Basmati rice-300 grams

Boneless Chicken -500 grams

Onion -2 nos

Ginger- Garlic paste-1 tspn

 cloves,cinnamon,cardamom -10 grams

Bay leaf -1

Capsicum -2 nos

Pepper powder-3 tspn

Coriander leaves -1/4 cup

Pudina  Leaves-1/4 cup

Salt to taste

Ghee -75 grams


Method:

Soak basmati rice for 1 hour.

Boil the chicken pieces with salt and pepper in a cooker for 3 whistle.

Strain the chicken pieces and keep the water .

Mince the boiled chicken pieces.

Cook the rice with the chicken water in a rice cooker.

Heat the pan with ghee and saute  with cloves,cinnamon,cardamom and bay leaf.

Add sliced onion and garlic paste and fry it well.

Add pudina and coriander leaves and saute till the raw smell goes off.

Add sliced capsicum and saute well.

Add pepper and salt with it.

Add Minced chicken pieces and saute it well.

Mix the above with cooked rice and Mix thoroughly.

Add pepper  and salt if needed.

Proper care should be taken while mixing, to prevent formation of lumps .

Reheat the mixed chicken rice in rice cooker.

Delicious chicken Fried- Rice is ready.

Serve hot with chicken 65 and Raita.

Ingredients:

Chicken piece -1/2 kg (medium pieces)

Corn Flour -1 ½ tspn

Maida -1 ½ tspn

Rice Flour-1 tspn

Garam Masala -1 tspn

Chilli Powder -1 ½ tspn

Lemon Juice -1

Curd -3 tspn

Ginger -Garlic Paste -1 tspn

Salt to taste


Method:

Mix the ingredients to semi-dry paste.

Marinate the chicken pieces for 2 hrs.

Heat the pan with oil.

Fry the marinated chicken pieces in low flame.

Crispy Fried chicken pieces are ready to serve.

For better colour use small quantity of of kesari powder (colour powder).
