Aloo Onion Masala Recipe / Baby potatoes Onion Masala Recipe

  • Blanch / Boil the potatoes.

  • Peel off the skin.

Peel off the skin,cut it in cubed shape and deep fry as shown in the figure.

Deep fry the potatoes and keep aside.

Ingredients :

Onion - 1
Green chillies -2
Tomato -1 small
Chilli powder -1/2 tspn
Coriander powder -1/2 tspn
Turmeric powder -1/4 tspn
Ginger garlic paste -1 tspn
Mustard seeds - 1/4 tspn
Urud dhal - 1/4 tspn
Channa dhal -1/2 tspn
Curry leaves - needed
Spring onion to garnish
Coconut oil -needed
Salt to taste

  • Heat oil saute mustard,urud dhal,channa dhal, curry leaves, green chillies and onion, till onions brown.

  • Add ginger garlic paste, chilli powder,coriander,turmeric powder and saute well.

  • Add chopped tomato, fried potatoes and salt.

  • Cook for few mints till the gravy becomes dry and golden brown.

Serve hot and garnish with chopped spring onions.

In a cooker blanch the bajji milagai for 5 mints.

Cook potatoes, peel the skin and smash it.

Meanwhile prepare filling by heating a pan with little oil saute with cumin seeds, onion and smashed potato. Add garam masala,turmeric powder and salt to taste.

Now split the blanched milagai and take out the seeds and fill it with the potato masala as shown in the picture.

Prepare bajji batter by mixing 1/2 cup of rice flour,1/2 cup of gram flour,2 spn of maida, 1 spn of chilli powder, a pinch of turmeric powder, asafoetida and salt needed. Mix well in a dosa batter consistency and keep it for 30 mints.

  • Heat a pan with oil. Immerse the stuffed bajji milagai in the bajji batter and fry it to golden brown.

  • Stuffed spicy milagai bajji is ready.

    Potato -2 nos (small) smashed

    Garam masala -1/2 tspn,Turmeric powder -1/4 tspn
    Bajji batter ( rice flour+gram flour+ maida+turmeric+chilli powder+asafoetida+salt)
    Coriander leaves needed
    Oil needed
    Cumin seeds -1/4 tspn(optional)
    Salt to taste
     

Method :

Ammini Kozhukattai Recipe / Mani Kozhukattai Recipe

Ammini Kozhukattai / Mani Kozhukattai

  • Boil the water with salt.

  • Take a bowl, add rice flour with boiled water and stir well without lumps.

  • Heat a tawa with little oil add the above dough and stir well for sometime.

Now switch the stove and roll the dough into small balls as shown in the picture.

Place the balls in idly cooker and cook for 10 mints.

Mustard seeds -1/4 tspn
Urud dhal -1/4 tspn
Idly milagai podi needed
Red chilli -2 nos
Cumin seeds -1/4 tspn
Salt to taste
Gingelly oil  - needed
Bengal gram/Channa dhal/Kadalai paruppu -1 tspn
Curry leaves needed
  • Heat a tawa with little oil saute with red chilli,channa dhal,urud dhal, mustard and curry leaves.

  • Add the cooked balls in it and shake well.

Sprinkle idly milagai podi as required and shake well.

    Red chilli -2 nos
    Cumin seeds -1/4 tspn
    Salt to taste
    Gingelly oil - needed
    Bengal gram/Channa dhal/Kadalai paruppu -1 tspn
    Curry leaves needed

Chicken Biriyani Recipe (Thalapakattu Style)

Chicken Biriyani (Thalapakattu Style)

Take a bowl. Mix curd with 1/2 tspn chilli powder,1/4 tspn turmeric powder and salt. stir well the mixture.

Marinate the chicken pieces with the mixture for 1 hour

Soak the basmati rice in water for 15 mints.

For grinding :

Bay leaf -2
Cloves -3
Cinnamon -3 pcs
Cardamom -3
Fennel seeds -2 tspn
Black pepper - 1/2 tspn
Coriander seeds -1 tspn
  • Heat a cooker with ghee and oil ,add sliced onion, green chillies and saute well.

  • Add ginger garlic paste and saute for 5 mints.

Grind the ingredients given above for grinding.

Add marinated chicken, grinded masala powder,1/2 tspn chilli powder and saute well till the oil separates.

  • Add pudina leaves.

  • Add soaked rice,4 cups of water and salt to taste.

Stir well

Add 4 cups of water and salt to taste.

Close the lid of the cooker and boil it in low flame for 1 whistle. Switch of the flame and keep for 10 mints.

 Biriani is ready.

 Biriani is ready.

Serve with onion raitha.

    Basmati rice -2 cups
    Chicken -500 gms
    Ginger garlic paste -2 tspn
    Chilli powder -1 tspn
    Green chilli -2
    Sliced onion -1 cup
    Salt to taste
    Pudina leaf -1 cup
    Ghee - 2 tspn
    Refined oil -2 tspn
    Turmeric powder -1/4 tspn
    Curd -1/2 cup

    For grinding :
    ***********
    Bay leaf -2

    Cinnamon -3 pcs
    Cardamom -3
