Mysore Pak Recipe / Diwali Sweets Recipe

Mysore Pak / Diwali Sweets Recipe
Ingredients :

Besan flour / Kadalai maavu -1 cup
Sugar - 2 1/2 cups
Ghee - 2 cups
Water - 1cup
Sieve besan flour.
  • Add 2 table spoon of ghee with the flour and roast it for 5 mints in a low flame.
Again sieve this and keep aside.
  • Meantime heat the balance ghee in a pan.
  • Grease the mysore pak tray with ghee and keep ready.
Heat  a pan with sugar and water till one string consistency.
Heat  a pan with sugar and water till one string consistency. Sugar syrup is ready.
  • Now add sieved roasted besan flour gradually to the sugar syrup and stir constantly.
  • Make sure that no lumps formed.
  • Add hot ghee simultaneously and stir well with a stirrer.
                    
  • Stir well till the mixture non-sticky with the pan.
  • Add remaining ghee, stir well and pour the mixture to mysore pak tray.
  • Set it to cool for sometime.
  • Now cut the mysore pak with a sharp knife in to required shapes.
Softy ,Tasty ,Yummy Mysore Pak  is ready.

    Ingredients :

    Cashews - 1 cup


    Sugar -1 cup


    Ghee -needed


    Water -4 to 5 tspn



Method :

  • Soak cashew in water for half an hour.
  • Drain the water and grind in to paste.
  • Heat  a pan add sugar and water and boil it to string consistency.
  • Add the cashew paste, little ghee and stir well till the paste becomes non-sticky.
  • Take  a plate, brush it with ghee and spread the cashew paste evenly.
  •  Allow it to cool.
  • Now cut it in to diamond shape with the help of cutter/knife.

Kadalai Paruppu Pooranam

 

Making of Poornam (For filling)

Ingredients :

Channa dhal / Kadala paruppu  - 1/4 kilo
Jaggery -1/2 kilo
Grated coconut -2 cups
Cardamom a pinch
Ghee needed

Method :

**********

 

Soak channa dhal for 1/2 an hour.

Cook it in a cooker for 1 whistle and smash it with a smasher.

Add jaggery with little water and boil it for 5 mints. Strain it to separate the dust.jaggery syrup is ready.

In a heavy bottom pan boil jaggery syrup till it starts to boil and slightly thick.

Add grated coconut, a pinch of cardamom and mix well. Now add channa dhal sufficient ghee and mix well till the mixture becomes non sticky form.

Mix well till the mixture becomes non sticky form.

Poornam for stuffing is ready.

Kadalai Paruppu Pooranam

Method :

Add salt, turmeric with Maida flour. Add water, oil and prepare the dough to chapatti  consistency. Make small balls of dough.

Coat the banana leaf with little ghee and spread the balls with hand to form poori shapes.

Make small ball size poornam, keep the ball  inside the dough and close it.

Spread it again with hand to form poori shapes.

Heat a dosa tawa ,spread little ghee and toast the poli to golden brown.

Yummy poli ready.

    Turmeric powder a pinch
    Salt a pinch
    Banana leaf -1 no
    Oil needed
    Ghee needed
    Water needed
     

 

 

Method :

Add salt, turmeric with Maida flour. Add water, oil and prepare the dough to chapatti  consistency. Make small balls of dough.

Rava kesari / Kesari Recipe


  • Take 3 1/2 cups of water add kesari powder with it and boil it well in a low flame .

  • Add roasted rava and boil it well.


  • Stir occasionally so that lumps cannot be formed.

  • Add sugar slowly and stir well.

  • Finally add nuts, raisins,cardamom roasted in ghee.


  • Add generous ghee and mix well.

  • Rava kesari is ready.

Raisins - 25 gms

Cardamom - 3 pods

Kesari powder / colour powder - a pinch

Ghee - 50 gms

  • Take 3 1/2 cups of water add kesari powder with it and boil it well in a low flame .
  • Add roasted rava and boil it well.
  • Stir occasionally so that lumps cannot be formed.
  • Add sugar slowly and stir well.

Semiya Payasam Recipe



Ingredients :

Roasted semiya -1 cup

Sugar- 1 1/2cup

Milk -1 1/2 cup

Sago rice/Javvarisi  -1/4 cup

Cashew nuts -10

Dry grapes -(raisins)-10

Cardamom powder -1/2 tspn

Water -3 cup

Ghee -needed


Method :

  • Soak sago rice in a cup for sometime.

  • Cook it for sometimes.
  • Cook the semia with boiled water.
  • Add sugar and boil it for sometime till sugar melted.
  • Add cooked sago rice into the content and mix well.
  • Roast cashews, dry grapes,cardamom powder with ghee and add it to the mix.
  • Cool the mix for sometime and add warm milk to the mixture and the payasam is ready.
