Boondi Ladoo Recipe / Diwali Recipe / Festival Recipe

Boondi Ladoo Recipe
Ingredients :
**********************

Besan Flour / kadalai Maavu - 1 cup
Sugar -1 1/2 cups
Baking soda a small pinch
Cardamom - 5 nos
Cloves - 2 nos
Cashew nuts(Broken) -10 nos
Raisin -10 nos
Sugar candy / Kalkandu - 10 nos
Ghee - 3 tspn
Water - 3/4 cups
Oil needed
Food colour (yellow) a small pinch

Sieve besan flour.
  • Mix besan flour with water to form dosai batter consistency.
  • Add a pinch of baking soda and mix well.
  • Heat oil in a pan.
  • Spread the batter evenly with the help of boondi ladle as shown in the picture.
  • Use separate ladle to take out boondi after its cooked. Don't deep fry .
Drain the oil with the tissue paper.
Roast the cashews, cardamom and raisins in ghee.
Meantime prepare sugar syrup by adding water to the sugar in a pan and boil it to 1 string consistency.
  • Add small pinch of food colour and stir well.
  • Add boondi,roasted cashew,cardamom,raisin and sugar candy to the sugar syrup.
  • Mix and smash the mixture partially.
  • Shape the mixture to ladoo with the help of hands when the mixture is warm enough to handle.

  • Boondi ladoo is ready.

Mysore Pak Recipe / Diwali Sweets Recipe

Mysore Pak / Diwali Sweets Recipe
Ingredients :

Besan flour / Kadalai maavu -1 cup
Sugar - 2 1/2 cups
Ghee - 2 cups
Water - 1cup
Sieve besan flour.
  • Add 2 table spoon of ghee with the flour and roast it for 5 mints in a low flame.
Again sieve this and keep aside.
  • Meantime heat the balance ghee in a pan.
  • Grease the mysore pak tray with ghee and keep ready.
Heat  a pan with sugar and water till one string consistency.
Heat  a pan with sugar and water till one string consistency. Sugar syrup is ready.
  • Now add sieved roasted besan flour gradually to the sugar syrup and stir constantly.
  • Make sure that no lumps formed.
  • Add hot ghee simultaneously and stir well with a stirrer.
                    
  • Stir well till the mixture non-sticky with the pan.
  • Add remaining ghee, stir well and pour the mixture to mysore pak tray.
  • Set it to cool for sometime.
  • Now cut the mysore pak with a sharp knife in to required shapes.
Softy ,Tasty ,Yummy Mysore Pak  is ready.

    Cashews - 1 cup


    Sugar -1 cup


    Ghee -needed


    Water -4 to 5 tspn



Method :

  • Soak cashew in water for half an hour.

  • Mix all the ingredients (except oil) to prepare a dough.
  • Cover it with soft cloth and keep aside for 15 mints.
  • Make balls out of the dough.
  • Roll them into thin layer.
  • Using pizza cutter, cut them into diamond shape as shown in the picture.

Sweet somas Recipe / Diwali Recipe / Somasi Recipe

Sweet somas Recipe / Somasi Recipe
  • Mix Maida, wheat flour and semolina.
  • Add little oil ,water and salt. Prepare the dough to chapatti batter consistency.
  • Roll the batter in small round shapes (poori form).
  • Take the somas mould , keep the rolled batter inside as shown in the figure, fill it with the mixture and closed the mould .

  • Take the somas mould , keep the rolled batter inside as shown in the figure, fill it with the mixture and closed the mould .
  • Now heat a pan with oil  dip the Somas roll to golden brown.

Grind roasted gram, sugar, cardamom into coarse form (rawa form) 

  • Heat a non-stick tawa add sesame, fry for 1 minute.
  • Add grated coconut, roast well.
  • Add the grinded roasted gram mixture and fry for sometime till the raw smell goes off.
  • Mix well the mixture, and keep the mixture in a airtight container.

    Grated coconut - 1 cup
    Black sesame seeds -25 gms
    Cardamom -4 nos

    Preparation of mixture for filling :

  • Grind roasted gram, sugar, cardamom into coarse form (rawa form)
  • Heat a non-stick tawa add sesame, fry for 1 minute.
  • Add grated coconut, roast well.
  • Add the grinded roasted gram mixture and fry for sometime till the raw smell goes off.
  • Mix well the mixture, and keep the mixture in a airtight container.
